The grape tomatoes in my garden are out of control.  Out of control!

What’s a girl to do with all those grape tomatoes?

Why, toss with pasta, of course!

Are you ready for how easy this dish is?  And it’s so good.  And looks pretty impressive.

Ingredients:

+a bunch of grape tomatoes (a pint – more or less, depending on how much you like grape tomatoes)

+a package of chicken sausage (I used Hormel’s chicken sausage in the apple and gouda flavor.  Oh.  My.  GOODNESS!  This was the best tasting chicken sausage I’ve ever had.)

+grated parmesan cheese

+extra virgin olive oil

+package of ravioli (I buy the fresh ravioli from Costco and freeze it.  I used a whole wheat ravioli stuffed with spinach and mozzarella.)

To do:

Cook ravioli according to the directions on the package.  Cut grape tomoates in half, set aside.  Cut up chicken sausage into bite sized pieces and brown in a pan coated with a little bit of olive oil.  Once the pasta and chicken sausage are cooked, combine the pasta, tomatoes, and chicken sausage, top with parmesan cheese and a sprinkle of extra virgin olive oil.

So good!  So easy!  So yummy!
