We are a family that believes in Costco.  Dan and I’ve outfitted our home in Costco, and I head to Costco monthly to stock up on everything from bread and cheese to toilet paper and paper towels.

One of the best values at Costco is the meat section.  I stock up each month on chicken breasts, beef, and, recently, I’ve added pork to our meal repertoire.  If you’re thinking about changing up your meal times and adding pork, good news!  Costco is offering discounts on pork in honor of National Pork Month.

Here’s more information:

To celebrate October as National Pork Month, Costco is offering discounts on top pork cuts from chops and roasts to pork tenderloin and boneless loins. Costco members can take advantage of weekly savings ranging from $2.00-$2.50.

This week, until October 7, Boneless Chops & Roasts are $2.50 off at Costco. Great for any meal of the day, boneless chops are quick-cooking crowd pleasers, perfect for easy entertaining. Lean, tender and juicy, chops can be further broken down to make party-starting kabobs, simple stir-fries or festive sliders.

Pork Makes the Party: Pork’s versatility and its ability to pair perfectly with a variety of foods and flavors makes it perfect for bringing people together this holiday season.  This holiday season celebrate pork as the catalyst that “makes” any party – join in!

Temperature News: The USDA reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees.

Here’s the fun part – I’m giving away a $50 gift card to Costco!  To enter, watch the video above and leave me a comment about the pork video, and I’ll enter you to win.  If you are already a Costco member, then you can use your $50 towards any Costco visit.  If you aren’t a Costco member, you can use the gift card towards your membership.  This giveaway is open until 11:59 p.m. Thursday, October 4, 2012.  I’ll announce the winner Friday, October 5, 2012.

I’m heading to Costco this week to pick up some pork, and I’ll be back later this week to share a pork recipe!

Disclosure:  I received products and compensation from Costco and The Motherhood as part of my participation in this campaign.  All thoughts and opinions expressed in this post are my own.

I love Jaden! That recipe looks yummy. Hubs would prefer it if I made straight hash with potatoes and bacon and didn’t clutter it up with apples. I need to go to Costco this week anyway. Maybe I will get some pork!

Ooh boy…that meal sounds delicious. I want to make that for dinner now. I love pork, and the thick cut bacon at would be perfect for this. Thanks for sharing Sarah!

Jaden, et. al., and the Maple Gravy and Apple Bacon Hash were a riot at the end… too funny, lots of giggles. Mike make Pork Loin Alfredo (sister dish to Chicken Alfredo). Had some left overs and voila…a new creation. It was delicious… the envy of all when he brought left overs to work today. We will definately try these recipes. Thanks for the ideas!

Congrats on this, Sarah! I’ve actually just started experimenting with pork, too. I tried with apples. And once with rice. That idea of maple gravy? Pure brilliant.

We love Costco and our slow cooker as well. We’re big fans of making pulled pork in the slow cooker. It comes out tender and feeds a crowd with little effort.
