I’ve been on a big smoothie kick recently.  I love the avocado banana smoothie.  And a berry smoothie is a traditional favorite.

But my new favorite is my peanut butter banana smoothie.  I came up with this recipe one afternoon when I was feeling blah and needed to get ready to teach an early evening class.  So I took stock of what I had on hand, fired up my blender, and this delicious smoothie was born.

Peanut Butter Banana Smoothie

Ingredients:

+small handful of ice cubes

+1/4 to 1/2 cup of milk (depending on how thick or thin you like your smoothies)

+1 banana

+2 tablespoons peanut butter

+1/4 cup Greek yogurt

Blend all in the ingredients in a blender until smooth.  This is my favorite breakfast and midafternoon snack when I need a pick-me-up and don’t want to read for crackers or sugary snacks.  This smoothie would also make a great dessert because it’s sweet (even with no added sugar).
