Whenever I’m in a recipe rut, I start to pin, pin away on my Pinterest recipe board, hoping for something delicious and easy. And I hope I already have all the ingredients on hand.
Unfortunately, most stuff I find looks absolutely delicious, but I’m missing at least one key ingredient. I’ve tried subbing stuff or leaving stuff out before, but the dish often ends up…lacking.
So when I needed something for dinner the other night, I cruised around my Pinterest board and ran across a couple chicken recipes. Of course, I was missing several key ingredients for most of the recipes. But one for honey sesame chicken seemed like a winner.
I reread the ingredient list half a dozen times and realized with great shock I actually had all I needed. And this recipe cooked in the crock pot. No emergency trip to the grocery and a set-it-and-forget-it meal? Sold.
As a base I served the chicken over brown rice (that quick cook in the bag kind). This dish turned out better than expected. I knew the chicken would be moist (as things tend to be when cooked in the slow cooker). But I wasn’t sure if the dish would turn out flavorful or blah.
Fortunately, the sauce is pretty intense and flavored the chicken and soaked into the rice. This dish is quite sweet, so FYI for all of you who are more into savory dishes. But for a quick and easy hot meal, it’s a winner at Casa Bagley.
